Boudin, a Cajun sausage of rice, pork and seasonings, is a Lafayette obsession, sold hot from meat markets, gas stations and specialty shops along the areas famous boudin trail. Alongside it are cracklins, fried pork skins, and other Cajun snacks. Stopping at a local boudin shop to eat a link fresh from the steamer is an essential Acadiana experience and a delicious taste of the regions everyday food culture, cheap and utterly authentic.
