Pitixana is a gloriously old-fashioned Baku hideaway, one of those vanishing places dear to old Bakuvians. There is no menu — everyone already knows what they serve — no printed bill, and the reckoning is still done on an abacus. It is less a restaurant than a ritual: a smoky, convivial spot to gather with friends over the freshest grilled meat.

Regulars come above all for the kebabs, cooked simply and superbly and washed down in the old style. The whole place runs on trust and familiarity — you eat, you settle up on the honour system — which makes a meal here feel like being let in on a local secret rather than served a tourist lunch.

Local tip: Come with a group and an appetite, and go with the flow — there is no menu to deliberate over, so let them bring the food. A little cash and a relaxed evening are all you need.
