Fruh am Dom is the quintessential Cologne brewhouse, a warren of wood-panelled halls beside the cathedral where waiters in blue aprons, the Kobes, keep the fresh Kolsch flowing in little glasses until you cover them. Hearty Rhineland food soaks it up. It is touristy but genuinely fun. Let the Kobes top up your glass until you signal you are done, and try the Halve Hahn with your Kolsch.
