Naeho Naengmyeon

The birthplace of Busan’s own noodle: run by five generations of the You family, who fled North Korea during the war and, short on buckwheat, made cold noodles with wheat flour instead — inventing milmyeon. Since 1953 they’ve served it from a hard-to-find back alley in Uam-dong. Chewy noodles in an icy, tangy broth, exactly as it began. Track it down for a bowl of living history.
