Why it matters: Chef Creole is the creation of Haitian-born Wilkinson Sejour, who built it up from Little Haiti roots into a local institution and stays active in community events like his Haitian Unity Fest. The kitchen turns out griot (fried pork), conch, whole fried snapper, and rice with black mushroom sauce. It was a favorite of the late Anthony Bourdain; get the conch and plantains.
