
Open since 1916, La Piojera is Santiago's most famous dive bar and the birthplace of the Terremoto, a lurid mix of fermented pipeño wine, pineapple ice cream and a shot of liquor that translates as 'earthquake' for good reason. Presidents, poets and dockworkers have all propped up this bar by the Vega Central market.
Squeeze onto a bench at a long communal table, order a Terremoto (and a smaller 'réplica' if the first one hits hard), and pair it with simple Chilean bar food while a piano or accordion player works the room.
Local tip: It gets loud and packed after dark — go for an early evening drink if you want to actually hear your table.
