Set in a restored 1863 cellar, Barbarestan revives 19th-century Georgian dishes from a rediscovered 1874 cookbook written by Barbare Jorjadze, Georgia's first feminist and cookbook author.
Reservations are recommended, especially in the evening – this is one of Tbilisi's most talked-about tables.
Local tip: Try the vegetarian dishes drawn straight from the historic recipes – meat was a luxury in 19th-century Georgia, so the plant-based menu here is unusually rich.
