Sita Ram Diwan Chand is a single-dish shop in Chuna Mandi, Paharganj, trading since 1950 and known across Delhi for chole bhature. The founders began selling from a bicycle near a local school, and the business, now run by later generations of the family, has opened branches elsewhere in the city, though this remains the original. The bhature are stuffed with paneer before frying, which sets them apart from the plain version sold elsewhere, and arrive with a bowl of spiced chickpeas, pickled carrot and green chilli. Orders are taken at a counter, with a handful of benches and standing room only at busy times. Portions are large, the menu is entirely vegetarian, and the shop often sells out before closing.
