Boragó is chef Rodolfo Guzmán's tribute to wild Chile, built around dishes that trace ingredients back to specific foragers and producers from Patagonia to the Atacama. It has held a place on the World's 50 Best Restaurants list every year since 2015, one of only a handful of South American kitchens to manage that.

The tasting menu, called Endémica, runs to a dozen or more courses and changes with what the day's foraging brings in — think altiplano flowers, Patagonian lichens and vegetables from the restaurant's own biodynamic farm.

Local tip: This is a special-occasion splurge with wine pairing on offer, so book well ahead and set aside a full evening.
