The most famous koshary joint in Cairo, Abou Tarek serves just one thing across its bustling downtown floors: the national dish of rice, lentils, pasta, chickpeas and fried onions doused in tomato and garlic-vinegar sauce. It is cheap, filling and beloved by everyone from students to suits. Order a medium bowl, add plenty of the spicy shatta and the garlicky daqqa, and mix it all together the way the locals do.
