Chipe Libre invented its own joke nation-state dedicated entirely to pisco, filling a grand Lastarria mansion with around 100 pisco labels and a menu of inventive sours built around the spirit. It takes something Chileans and Peruvians both claim as their own and turns it into a genuinely fun night out.
