Liguria has been Santiago's classic bistro since 1992, the kind of place where the carne mechada — braised beef in tomato and red wine, piled onto pasta or into a sandwich — has barely changed in three decades. It's as much a bar as a restaurant, with schops and pisco sours flowing from late afternoon.

The Providencia branch is the original and still has the most atmosphere, especially at the tail end of a long lunch.

Local tip: It runs four locations around the city now, so check you're heading to the branch nearest you.
