Baba Bastani, near Eram Garden in the Jahad Sazandegi area, is where Shirazis go for faloodeh, the rosewater-and-noodle sorbet the city is famous for, alongside classic Persian ice cream. It gets properly busy in the evenings, which says something about the quality.
Local tip: Ask for the mixed ice cream to try several flavours at once; it is an unfussy, stand-and-eat kind of place.
